Hi there,
I have some mice that look like himilayans/siamese but they are pied?
Does anyone know more about this?

It's very difficult to see from your picture, at least on my screen, but Siamese/Himalaya Pied is definitely possible

It is pretty difficult to see yes, they have a darker color on their nose and ears and their fur is cream with one or two white patches Yes i think so too

Are the eyes black, ruby, or pink colored?
Black = Colorpoint Beige
Ruby = Siamese
Pink = Himilayan

They are a super light cream and they have pink eyes So i think himalayan then?

Probably, can't verify without images. Need to look at the coloring of the fur too.

Himilayan- I personally don't see piebald IMO.

Ah okay It's super hard to see, because there is barly any difference in color.. It's that light blotch on her side
