I think Nitrogen is just not recommended for amateur use - you have to store and transport it properly in a polystyrene container, you have to move it above using tongs, goggles and gloves, and if you're using it to cull animals you have to build a chamber in two parts so that the animal can't get to the nitrogen block but the gas can get to the animal. I don't think the actual method of killing is much different though.
